Ingredients:
- 8 oz udon noodles
- 2 boneless, skinless chicken breasts, sliced into thin strips
- 1 tablespoon vegetable oil
- 2 garlic cloves, minced
- 1 tablespoon grated ginger
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 red bell pepper, sliced
- 1 cup snow peas
- 2 green onions, sliced
- 1 tablespoon sesame seeds, toasted (optional)
Instructions:
- Cook udon noodles according to package directions, then drain and set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat. Add chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
- Add garlic and ginger to the pan and sauté for 1-2 minutes, until fragrant.
- In a small mixing bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil.
- Add the red bell pepper and snow peas to the pan and stir-fry for 3-4 minutes, until the vegetables are slightly softened but still crispy.
- Add the chicken back to the pan, along with the cooked udon noodles and the sauce. Stir-fry for an additional 1-2 minutes, until everything is heated through and evenly coated with the sauce.
- Serve hot, garnished with sliced green onions and toasted sesame seeds if desired.
